CHOCOLATE CRAZY CAKE

Just in time for Valentines Day... My favorite chocolate cake & frosting recipe.

CHOCOLATE CRAZY CAKE 
3 cups all-purpose flour 
2 cups sugar 
1 teaspoon sea salt
2 teaspoons baking soda
3/4 cup unsweetened cocoa powder 
3/4 cup vegetable oil(my favorite combo is 1/4 coconut oil, 1/4 canola oil, 1/4 olive oil)
2 tablespoons distilled white vinegar 
2 teaspoons vanilla extract 
2 cups cold water
Directions:
Add all dry ingredients together and mix well. Add wet ingredients to dry and mix just until well incorporated, don’t over mix.
Grease a 9x13 pan with coconut oil using wax paper to help distribute oil.
Preheat oven to 350 degrees. Set timer to check cake after 30 minutes. When your toothpick comes out clean. Set on cooling racks and cool completely before frosting.
PERFECT CHOCOLATE FROSTING
 1/2 cup (1 stick) vegan earth balance
 2/3 cup Cocoa powder
 3 cups powdered sugar
 1/3 cup coconut milk 
 1 teaspoon vanilla extract 
Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.
